INGREDIENTS
3lbspotatoes(halved or quartered, depending on size)
1tbspolive oil
4clovesgarlic(finely minced)
2tbspfresh rosemary(chopped)
salt and pepper(to taste)
INSTRUCTIONS
Preheat oven to 400° F or air fryer to 380° F.
Line a large baking sheet with aluminum foil for easy clean up.
In a large bowl, combine olive oil, garlic, and rosemary until well mixed. (You can add salt and pepper at this stage as well.)
Add potatoes and stir until all potatoes are evenly coated.
Oven Instructions
Spread potatoes on the prepared baking sheet in a single layer.
Roast potatoes in oven until "fork tender," about 45 minutes to an hour, depending on the size of your potatoes.
Flip potatoes occasionally so they brown evenly.
When the potatoes are tender, take them out of the oven and place in a platter or bowl. Garnish with rosemary sprigs if desired.
Instant Pot Vortex Instructions
Spray rotisserie basket with cooking spray.
Place potatoes in basket, being careful not to drip in the oven.
Turn the rotisserie on and bake for 20 minutes.
NOTES
I usually pair this with lemon chicken. when I do, I add a little fresh lemon juice to the liquid for a zing ... and lemon zest when I'm feeling extra crazy.Instant Pot Vortex Air Fryer Instructions:
