INGREDIENTS

vegetable oil

buttermilk

flour

baking soda

bananas
(ripe, mashed)

nuts
(pecans)
INSTRUCTIONS
Preheat oven to 350° F.
Beat eggs and add sugar, oil, and buttermilk.
In a separate bowl, sift together flour, soda, and salt.
Stir in to egg mixture until fully combined; batter will be thick.
Fold in mashed bananas and nuts.
Pour in to lined muffin tins and bake for 23-25 minutes or until inserted toothpick comes out clean.
NOTES
To make mini-loaves:
bake at 350 for 25 minutes.
To make 2 regular-sized loaves:
bake at 325 for 50-60 minutes.
