I discovered this recipe while on Weight Watchers. It was great, but I really did not like flipping the potatoes, so I now use my Instant Pot Vortex air fryer to cook these babies. They are so yummy!
EQUIPMENT
- Instant Pot Vortex Air Fryer (optional)
INGREDIENTS
- 3 lbs potatoes (halved or quartered, depending on size)
- 1 tbsp olive oil
- 4 cloves garlic (finely minced)
- 2 tbsp fresh rosemary (chopped)
- salt and pepper (to taste)
INSTRUCTIONS
- Preheat oven to 400° F or air fryer to 380° F.
- Line a large baking sheet with aluminum foil for easy clean up.
- In a large bowl, combine olive oil, garlic, and rosemary until well mixed. (You can add salt and pepper at this stage as well.)
- Add potatoes and stir until all potatoes are evenly coated.
Oven Instructions
- Spread potatoes on the prepared baking sheet in a single layer.
- Roast potatoes in oven until "fork tender," about 45 minutes to an hour, depending on the size of your potatoes.
- Flip potatoes occasionally so they brown evenly.
- When the potatoes are tender, take them out of the oven and place in a platter or bowl. Garnish with rosemary sprigs if desired.
Instant Pot Vortex Instructions
- Spray rotisserie basket with cooking spray.
- Place potatoes in basket, being careful not to drip in the oven.
- Turn the rotisserie on and bake for 20 minutes.
NOTES
I usually pair this with lemon chicken. when I do, I add a little fresh lemon juice to the liquid for a zing … and lemon zest when I’m feeling extra crazy.
