Banana Nut Muffins

I get asked about this recipe most often. It isn’t the most to look at, but it really is yummy! I’ve made it in standard loaves, mini loaves and muffins. These days I tend to make muffins, only to save on clean-up time.

EQUIPMENT

  • Muffin tins
  • 2 mixing bowls

INGREDIENTS

  • 3 eggs
  • 2 cups sugar
  • ¾ cup vegetable oil
  • cup buttermilk
  • 3 cups flour
  • 1 ½ tsp baking soda
  • 1 ½ tsp salt
  • 4 bananas (ripe, mashed)
  • 1 ½ cup nuts (pecans)

INSTRUCTIONS

  • Preheat oven to 350° F.
  • Beat eggs and add sugar, oil, and buttermilk.
  • In a separate bowl, sift together flour, soda, and salt.
  • Stir in to egg mixture until fully combined; batter will be thick.
  • Fold in mashed bananas and nuts.
  • Pour in to lined muffin tins and bake for 23-25 minutes or until inserted toothpick comes out clean.

NOTES

To make mini-loaves: bake at 350 for 25 minutes.
To make 2 regular-sized loaves: bake at 325 for 50-60 minutes.
