Oven Fried Chicken

This is a Travis-Often-Requests recipe (meal)! We serve this with mashed potatoes and Pioneer Country gravy.

INGREDIENTS

  • 3-4 boneless/skinless chicken breasts (cut in slices for faster cooking)
  • 1 cup flour
  • 1 ½ tbsp salt
  • ½ tbsp pepper
  • ½ tbsp paprika
  • ½ cup oleo or butter (1 stick, cut in pieces)

INSTRUCTIONS

  • Preheat oven to 425° F.
  • Rinse chicken thoroughly in cold water and pat with paper towels.
  • Mix dry ingredients together in a zip-lock bag, shaking to mix completely.
  • Melt butter in shallow baking pan in the oven. (Remove the pan from the oven once the butter is melted.)
  • Place 3-4 pieces of chicken at a time in the bag.
  • Shake the back in order to coat the chicken thoroughly in the flour mixture.
  • Place chicken, in a single layer, in the baking pan.
  • Bake 30 minutes.
  • Turn chicken over and bake for an additional 15 minutes.
