I was looking for a quick dinner, but wanted something different, when I stumbled on this recipe. It looked easy enough, so I thought I’d try it! It was delicious. Of course, I modified a lot of it and it turned out great. It’s our new favorite.
Teriyaki Chicken Bowl

INGREDIENTS
- 1 ¼ lbs chicken breasts (diced)
- 1 tbsp olive oil (extra virgin)
- ¼ cup low-sodium soy sauce
- ¼ cup water
- 2 tbsp honey
- 2 tbsp light brown sugar (packed)
- 1 tbsp apple cider vinegar
- ⅛ tsp ground ginger
- 2 cloves garlic (fresh, minced)
- 1 tbsp corn starch
- chopped green onions (optional, for garnish)
INSTRUCTIONS
- Heat olive oil in a 12-inch non-stick skillet or wok over medium-high heat.
- Add chicken and let cook thoroughly, about 15-20 minutes.
- While chicken is cooking, whisk together soy sauce, water, honey, brown sugar, apple cider vinegar, ginger, garlic, and corn starch.
- Stir in the sauce with the cooked chicken and continue to cook and toss until the sauce has thickened, about 2-3 minutes.
- Serve warm on a bed of steamed rice, garnished with green onions.
NOTES
- You can garnish with sesame seeds, if you’d like.
