Teriyaki Chicken Bowl

I was looking for a quick dinner, but wanted something different, when I stumbled on this recipe. It looked easy enough, so I thought I’d try it! It was delicious. Of course, I modified a lot of it and it turned out great. It’s our new favorite.

INGREDIENTS

  • 1 ¼ lbs chicken breasts (diced)
  • 1 tbsp olive oil (extra virgin)
  • ¼ cup low-sodium soy sauce
  • ¼ cup water
  • 2 tbsp honey
  • 2 tbsp light brown sugar (packed)
  • 1 tbsp apple cider vinegar
  • tsp ground ginger
  • 2 cloves garlic (fresh, minced)
  • 1 tbsp corn starch
  • chopped green onions (optional, for garnish)

INSTRUCTIONS

  • Heat olive oil in a 12-inch non-stick skillet or wok over medium-high heat.
  • Add chicken and let cook thoroughly, about 15-20 minutes.
  • While chicken is cooking, whisk together soy sauce, water, honey, brown sugar, apple cider vinegar, ginger, garlic, and corn starch.
  • Stir in the sauce with the cooked chicken and continue to cook and toss until the sauce has thickened, about 2-3 minutes.
  • Serve warm on a bed of steamed rice, garnished with green onions.

NOTES

  • You can garnish with sesame seeds, if you’d like.
