Chicken a la King
This is Roni's favorite dinner! I have sweet memories of Zene and they all fill my house when I make this recipe!

INGREDIENTS
Chicken Sauce:
- 2 cups cooked chicken
- ⅓ cup margarine
- ⅓ cup chopped onion
- ½ cup diced celery
- ⅓ cup flour
- 4 tsp marjoram or thyme
- ¼ tsp Worcestershire sauce
- ½ tsp salt
- ¾ cup milk
- 2 cups broth
Cornbread Ring:
- 1 tsp poultry seasoning
- 1 cup corn meal
- 1 cup sifted flour
- ¼ cup sugar
- 4 tsp baking powder
- ¼ tsp salt
- 1 egg
- 1 cup milk
- ¼ cup meted shortening or oil
INSTRUCTIONS
Chicken Sauce:
- Melt margarine over low heat, saute onion and celery until lightly browned.
- Add flour and seasonings, blend until smooth.
- Add milk and chicken broth gradually; cook, stirring constantly until sauce is thick and smooth.
- Add Worcestershire sauce.
- Add chicken to sauce and beat thoroughly.
- Pour into baked corn bread ring.
- Serve immediately.
Cornbread Ring:
- Sift together dry ingredients.
- Add egg, milk and shortening.
- Stir until ingredients are well mixed.
- Do not beat.
- Baked in a greased 8 inch ring mold in 425 oven for 20-25 minutes.
- Turn out onto platter (I use a pie plate).
- Fill center of ring with creamed chicken.
