INGREDIENTS

Chicken Sauce:

  • 2 cups cooked chicken
  • cup margarine
  • cup chopped onion
  • ½ cup diced celery
  • cup flour
  • 4 tsp marjoram or thyme
  • ¼ tsp Worcestershire sauce
  • ½ tsp salt
  • ¾ cup milk
  • 2 cups broth

Cornbread Ring:

  • 1 tsp poultry seasoning
  • 1 cup corn meal
  • 1 cup sifted flour
  • ¼ cup sugar
  • 4 tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 1 cup milk
  • ¼ cup meted shortening or oil

INSTRUCTIONS

Chicken Sauce:

  • Melt margarine over low heat, saute onion and celery until lightly browned.
  • Add flour and seasonings, blend until smooth.
  • Add milk and chicken broth gradually; cook, stirring constantly until sauce is thick and smooth.
  • Add Worcestershire sauce.
  • Add chicken to sauce and beat thoroughly.
  • Pour into baked corn bread ring.
  • Serve immediately.

Cornbread Ring:

  • Sift together dry ingredients.
  • Add egg, milk and shortening.
  • Stir until ingredients are well mixed.
  • Do not beat.
  • Baked in a greased 8 inch ring mold in 425 oven for 20-25 minutes.
  • Turn out onto platter (I use a pie plate).
  • Fill center of ring with creamed chicken.
